1 cup pineapple juice, unsweetened
1/8 cup Coco Lopez– Cream of Coconut
1/2 cup club soda
2 cups ice
Pineapple wedge
Maraschino cherry to garnish
(Serves 4-6)
1. Mix pineapple juice, Coco Lopez, club soda, and ice in blender.Process until ice is slush. Stir between processing if needed. May add more club soda to obtain a thick, slushy consistency. May store in individual glasses in freezer for up to one hour (to prevent thoroughly freezing) if you want to make drinks ahead. Best if served immediately.
2. Garnish with pineapple wedge and maraschino cherry on a toothpick.
Makes 3 1/2 to 4 cups. Enjoy!!!!!
