1 cup pineapple juice, unsweetened 1/8 cup Coco Lopez– Cream of Coconut 1/2 cup club soda 2 cups ice Pineapple wedge Maraschino cherry to garnish (Serves 4-6) 1. Mix pineapple juice, Coco Lopez, club soda, and ice in blender.Process until ice is slush. Stir between processing if needed. May add more club soda to obtain a thick, slushy consistency. May store in individual glasses in freezer for up to one hour (to prevent thoroughly freezing) if you want to make drinks ahead. Best if served immediately. 2.
