Soy: A Miracle Bean

Soy is an excellent source of dietary protein, including all essential amino acids. Soy is also a source of lecithin or phospholipid. Soy beans contain fairly high levels of several compounds with demonstrated anti-cancer-activity. For example soy beans are a very rich source of isoflavanoids, such as genistein.  These isoflavonoids have been shown to inhibit the growth  of both human breast and prostate cancer cells. Isoflavones are phytochemicals which mimic the activity of estrogen in the body without the negative effects of taking estrogen.

Research shows that soy may help protect against or heal some of the sun’s photoaging damage. One study, published in the European Journal of Nutrition,reported that a soy-based supplement (whose ingredients also included vitamins, fish protein, and extracts from white tea, grapeseed, and tomato) improved the skin’s structure and firmness after just six months.
